Creamy Chicken and Pasta Dish

Weekends are all about trying new recipes and indulging in old favorites. I have been craving this dish for quite some time, but never came around to making it. I felt that after Bariatric Surgery, I needed to avoid all foods that would make me “Regain” my weight. But the truth is, theres lots of reasons that could make you regain weight again. The biggest reason is restricting yourself from guilty foods. Instead, buy some awesome portion control dishes, and adjust your eyes. You can still have all of the foods you love, just not at the size of a Thanksgiving plate.

 

Shopping list

 

  1. Pasta of choice
  2. Heavy cream
  3. Tomato Paste
  4. Sweet Cherry Tomatoes
  5. Spinach
  6. Chicken Breast (4-6oz per person)
  7. Parmesan Cheese
  8. Unsalted Butter
  9. 1 Red onion
  10. Garlic Cloves

 

Spices

 

  • Salt
  • Pepper
  • Garlic Powder
  • Paprika
  • Blackening Chicken Seasoning
  • Onion Powder

Sauce

  1. Pour 1 tablespoon of Olive Oil in your Skillet
  2. Next add 2 cloves of Garlic. Diced
  3. Then turn the heat on to medium low heat
  4. Add your spices for the base of the chicken.
    • Salt, Pepper, Garlic Powder, Blackening Chicken Seasoning, Paprika, Onion Powder
  5. Add 1 chicken breast to the pan. Be sure to cut and clean your chicken.
  6. Let your chicken cook on each side for about 10 -15 minutes
  7. Before removing the Chicken from your pan, add Sweet Cherry Tomatoes

  9. Let the Tomatoes and Chicken cook together for about 5-10 minutes
  10. Add 1/4 cup of a diced red onion to the pan with the Tomatoes and Chicken
  11. When the Chicken is finished, remove it from the pan and place it on a cutting board
  12. Slice the chicken into strips, or which ever way you prefer
  13. Then, lower your heat on the stove while the tomatoes, and onions are still sautéing
  14. Place the chicken strips back into the pan
  15. Next, add 1/2 cup of Tomato past to the middle of the pan with 1 tablespoon of butter
  16. Add another round of your seasonings to add flavor to the tomato paste
  17. Then add 1 cup of heavy whipping cream to the pan
  18. Be sure that the pan is still on low heat, or your heavy cream will curdle
  19. Now start stirring everything together until the cream and tomato paste is blended together
  20. Add more cream as you go if you feel your dish needs it
  21. Next sprinkle a good heaping of Shredded Parmesan cheese to the pan
  22. Sounds bad, but guilty pleasures need to be done the right way!
  23. Now that all of the cheese, cream, and paste are blended, its time to add the spinach!
  24. Pour as much spinach as you wish to the pan
  25. I used about 4 cups
  26. Fold the spinach throughout the pan, allowing for the spinach to sauté and reduce in size

  28. Finally Add your cooked pasta of choice to the pan and mix everything together
  29. Add more seasonings if you wish
  30. Then take your 4oz ramekin dish and serve yourself a nice dinner!

If you would like to make this for a dinner party, just double this recipe for however many people will be joining.

Pasta

  1. Start by adding 2 cups of water to your pot
  2. Place pot on stove
  3. turn heat on high and let water come to a boil
  4. once water is at a boil, tun it down to medium heat
  5. Now add your pasta of choice
  6. Let boil for 10-13 minutes or until pasta is cooked
  7. Stir your pasta in the boiling water frequently so the pasta does not stick together.
  8. Once the pasta is cooked remove from heat
  9. drain your pasta water by using a colander
  10. Then add the pasta back to your pan and add 1 tablespoon of unsalted butter
  11. This helps the pasta not stick together
  12. Finally, when the chicken and creamy sauce are finished, add your pasta to the pan
  13. Stir together until all pasta and sauce is mixed
