Summer Meal Prep

There are way too many things going on in the world right now that are so hard on everyone. I have been away from my blog now for 2 months, and it has not been easy. Being away from my blog has opened my eyes in realizing what I love most about sharing my meal preps. To help others who were stuck like I was.

This world is crazy, and no one is going to know when this is all going to end. I may not be back in my classroom running Lego Club, or Robotics club, but I can still help others on here. This weeks meal prep is in honor of all of the Black Children I have taught throughout my years. You are beautiful, you will make a difference, you will become the Engineer you want to be, and you will change the world. Do not let the bad of others stop you from achieving your goals. Yes, I am white. No, I am not perfect. But I will strive to better myself every day until Black Children receive the same support as white children. Together, we will make it happen.

Meal Prep

I finally made it back to Virginia after being told to leave my classroom for what was supposed to be 3 weeks. I packed up a few things and headed to my parents to enjoy what I thought was going to be a mini extension of Spring Break. Well, that turned into 2 months of Quarantine and a lot of cooking! Now that I am back home, I need to stick to my budget. And sticking to my Budget best is shopping at Aldi!! You can’t beat their prices!

Breakfast

For breakfast this week I am going to have my Chunky Monkey oats! These have become a hit and are really good! Click on the Picture to get my recipe!

 

Snack 1: Scrambled Eggs

This is super easy to make

  • Crack 10 eggs into a bowl- (2 eggs for 5 days)
  • Add Salt and Pepper
  • Use a fork to whisk your eggs until the yolk is how you like it
  • Pour 1 tbsp of Olive Oil into your Non Stick pan
  • Turn your stove burner onto medium heat
  • Pour the eggs into your pan
  • Use a spatula to continue to stir your eggs
  • Repeat this until your eggs are fluffy and cooked to how you like
  • Add these to your favorite Tupperware and place in refrigerator

 

Lunch: Chicken and Pepper Salad

Lunch was super easy to make. I bought a huge family sized bag of chicken and froze them for next weeks meal prep.

  • Cut your peppers into slices
  • Cut your onions into slices
  • Add 1 tbsp of Olive Oil to your pan
  • Add the peppers and onions
  • Add salt, pepper, chili powder, paprika, and 2 cloves of garlic to your pan. This is all to taste. I do not measure.
  • While your peppers and onions are cooking, start slicking your chicken breast into slices. Not cubes. Ok you can actually cut them into any style you’d like!!! lol!!!

  • Now add your chicken to the same pan as the veggies
  • This helps with flavor and taste
  • Once your chicken is fully cooked remove from heat
  • Now place about 2 cups of spinach into each Tupperware container
  • Use your scale to measure out about 4 oz of chicken and add that to the tops of each salad

And your all done with lunch!!! You can add any dressing you’d like, just make sure to add it to your calorie count.

Snack 2: Honey Crisp Apple

Thats it! I know its super light, but I have some ELL BEES to shred! Next week I will be adding more protein to my snacks!

Dinner:

Dinner I did not prep yet, however I already bought the ingredients.

I really do love cooking in the kitchen, so this gives me some freedom while I still meal prep!

  • Calories: 987- I know this is low, but this leave me room for any late night muncies
  • Protein: 77g
  • Carbs: 107g
  • Fiber: 29g
  • Sugar: 40g
  • Fat: 33g

Shopping list

Everything I used to make this Meal Prep came from Aldi!

  • 2 bags of Spinach- you might only need 1
  • Brussel Sprouts
  • Onion Trio bag
  • Fresh Garlic
  • Ground Flax Seed
  • Steel Cut Oats
  • Broccoli Crowns
  • Green Peppers
  • 1 Dozen Large Eggs
  • Ground Turkey
  • Chicken Breast
  • Honey Crisp Apples
  • Banana
  • *I already had Chia Seeds at home*

Price: $44.83

This week I prepped for 4 days.

Which means I am eating for about $11.20 a day. For those of you who follow me, this is normally lower, but $11.20 a day is still cheaper than going out to eat for 1 meal.
