Teachers and the busy working parents, Meal Prep.

I see you. Teachers, moms, dads, and even the grandparents. Raising a family is hard. Raising a family, and being a teacher, is even harder. The paper work, data, creating quizzes, tests, check points, projects, assignments. And then grading the assignments, quizzes, and everything else. Teaching is also parent phone calls 25x a week. Meetings, planning bathroom breaks, unplanned emergencies, working an after school club, writing report cards, blogging you lesson on twitter, and on top of all of this; PLAN. Being a teacher, especially a new teacher, leaves you very little time with your loved ones. In fact, it leaves almost no time at all. To help with those extremely busy weeks, here is a really awesome, extra basic meal prep. Dinner is not included in this weeks meal prep. I will be trying to make my own dinners each night at home, to help relieve the classroom stress! Cooking is a fun hobby of mine, so I am using this week to cook all my dinners at home. Breakfast Smoothie

  • Spinach
  • Banana
  • 1 cup Frozen Strawberries
  • 1 tablespoon Chia Seeds
  • 1 tablespoon Flax Seeds
  • Ice
  • Water

I do not add milk or yogurt to my smoothies, however, this is a great option for anyone wishing to add protein or extra calcium in their diets.

Lunch

  • Pre-made South west salad.

Yes, I could have made my own salad with black beans, corn, tortilla strips and ranch dressing. But again, THIS TEACHER IS TIRED! This definitely cost me a lot more money to buy already pre packaged things, but it gave me a few more hours back into my Sunday to be able to relax. If you would like to make your own southwest salad at home, here are the ingredients below that you could buy to make it.

  • 2 Cups Spinach
  • 1/2 cup black beans
  • 1/4 cup corn
  • grilled 4 oz of chicken, seasoned with pepper, salt, and chipotle powder
  • 2 tablespoon of your favorite type of ranch.

Snacks

  • 2 Pre Packaged, pre-peeled, hard boiled eggs. Sprinkle everything bagel seasoning over it and you are all set!
  • Dannon light and fit vanilla yogurt
  • cheese sticks
  • 2 oz of honey sliced turkey meat.

Shopping List

  • 2 packages of spinach
  • 5 bananas
  • a small bag of frozen strawberries
  • chia seeds
  • flaxseeds
  • package of string cheese
  • 5 pre packaged south west salads (or use the ingredients up above to build your own)
  • 5 Dannon light and fit yogurt

Macros

  • Calories: 875
  • Carbs: 82 g
  • Fiber: 20g
  • Protein: 58 g

Remember, eating healthy does not need to be fancy, or time consuming. This meal prep took me a total of 15 minutes to shop and 25 minutes to put together. Super quick and Super easy. I hope all teachers and working parents have a great week!
